Job Description

G.S. Gelato & Desserts, Inc. is seeking an experienced professional to join our Research & Development team with a focus on ice cream, gelato, sorbet, and non-dairy frozen dessert formulation. This role requires hands-on expertise in frozen dessert production, recipe development, and scaling formulations from benchtop to full production.

***This position is on-site only and requires relocation if you are outside the local area.***

Key Responsibilities

• Develop new frozen dessert formulations, including gelato, ice cream, sorbet, and non-dairy varieties.
• Produce R&D test batches and optimize recipes for quality, consistency, and manufacturing efficiency.
• Utilize pastes, variegates, inclusions, stabilizers, emulsifiers, and functional ingredients appropriately within formulations.
• Operate R&D and production equipment such as batch freezers, pasteurizers, mixers, and related machinery.
• Make sensory and organoleptic adjustments to match desired texture, body, flavor, and appearance.
• Support scale-up trials and collaborate with Production to ensure successful transition to manufacturing.
• Source and evaluate new raw materials and ingredients; maintain required documentation and specifications.
• Work cross-functionally with QA, Production, Purchasing, Sales, and Marketing on product development initiatives.
• Maintain accurate formulation records, product specifications, and regulatory documentation.

Qualifications

• Demonstrated, hands-on experience in commercial ice cream, gelato, sorbet, or non-dairy frozen dessert production and formulation.
• Strong understanding of frozen dessert ingredients, processing methods, and equipment.
• Ability to independently troubleshoot formulation and processing challenges.
• Excellent organizational, analytical, and communication skills.
• High attention to detail and ability to manage multiple projects in a fast-paced environment.
• Degree in Food Science or related field preferred; equivalent experience in frozen dessert formulation will be considered.
• Proficiency with standard software (Excel, Word, etc.).
• Must be able to work on-site daily.
• Relocation to Fort Walton Beach, FL required (relocation assistance available).
